When it comes to biryani, everyone’s a taker. Rice grains, cooked in aromatic spices, layered with masala, and in this case, paired with hard-boiled eggs, make it a power-packed dish on its own. Add a creamy, green moilee (mild coconut milk-based stew) to the mix, and you’ve got a complete meal, no extra sides needed.

¼ cupGreen peas, boiled
1Large onion, sliced

1 tbspBiryani masala powder
¼ cupYoghurt, whisked

1Bay leaf

2-3Cardamom pods

For the moilee:
1 tbspCoconut oil
1 tspMustard seeds
1 sprigCurry leaves
1Large onion (sliced)
2Green chillies, slit
1 tbsp Ginger-garlic paste
1Small tomato, chopped
1 cupMixed vegetables (green peas, carrots, beans)
1 cupThin coconut milk
½ cup Thick coconut milk
½ tspTurmeric powder
to tasteSalt

Prep the ingredients

Rinse the rice under water and then soak it for at least 20 minutes. Meanwhile, hard-boil four eggs (takes 15 minutes) and chop all vegetables as required.
