Mutton Keema Ghotala is widely associated with Mumbai’s late-night food culture and is especially popular during Ramadan, when rich, protein-packed dishes are preferred after a long fast. The word “ghotala” refers to the technique of vigorously mixing scrambled eggs into spiced minced meat, creating a slightly coarse yet creamy texture. Unlike plain keema, this version is finished with eggs and butter, giving it added richness and body. It pairs beautifully with pav, tandoori roti, or roomali roti, making it suitable for iftar gatherings or hearty dinners. The bhuna process deepens the flavour, while the eggs mellow the spices, creating balance in every bite.

Description - Step 1

Build the Base

Heat oil in a heavy-bottomed pan over medium heat. Add chopped onions and cook until they turn light golden and slightly caramelised. Stir in the ginger-garlic paste and sauté until the raw aroma disappears. Add green chillies and tomatoes, cooking patiently until the tomatoes soften completely, and the oil begins to separate from the mixture.
