A wholesome bowl of khichdi can beat the Monday blues, chilly evenings, and everything else in between. This one is made with oil and combines quinoa and sprouted moong with basic spices to make a vegan, protein-rich version. Enjoy it with crisp papad, cool yoghurt, and a little pickle for a simple supper.

1Medium onion, chopped
1Medium tomato, chopped
1Green chilli, chopped
3Garlic cloves, chopped
1 tspOil
1 tspCumin seeds
½ tsp Turmeric powder
1 tspCoriander powder
1 tspGaram masala
to tasteSalt
for garnishFresh coriander

Description - Step 1

Soak and rinse the quinoa

Thoroughly rinse the quinoa under running water before soaking it for at least 2 hours. Drain the water and set aside. The moong beans should already be sprouted
