Description - Step 1

Make the chilli oil

Heat a large skillet over medium heat. Add ⅓ cup sesame oil, garlic, and red pepper flakes. Cook gently, stirring often, until fragrant but not browned. Remove from heat and transfer carefully to a heatproof bowl.

Mix the sauce

In a bowl, whisk together soy sauce, hoisin sauce, honey, rice vinegar, peanut butter or tahini, and ⅓  cup water until smooth.

Cook the noodles & build the broth

Bring a large pot of water to a boil and cook the noodles until just tender. Drain and set the noodles aside for later. In the same pot, add chicken broth and half of the sauce mixture. Bring to a gentle simmer and stir in spinach, cook until just wilted.

Caramelise the chicken

Place the skillet back over medium-high heat. Add 2 tablespoons of sesame oil and the ground chicken. Season with black pepper and cook for 5 minutes, breaking it apart, until browned. Add mushrooms and shallot, cook for 2 to 3 minutes. Pour in the remaining sauce mixture and simmer until thick, glossy, and caramelised. Lastly, stir in 2 to 4 tablespoons of chilli oil and remove from the heat.

Assemble the bowls

Divide broth into bowls, add noodles, and toss gently. Spoon the crispy chicken mixture on top. Finish with green onions and extra chilli oil if you like.
