Heat a large skillet over medium heat. Add ⅓ cup sesame oil, garlic, and red pepper flakes. Cook gently, stirring often, until fragrant but not browned. Remove from heat and transfer carefully to a heatproof bowl.

Mix the sauce
In a bowl, whisk together soy sauce, hoisin sauce, honey, rice vinegar, peanut butter or tahini, and ⅓ cup water until smooth.

Cook the noodles & build the broth
Bring a large pot of water to a boil and cook the noodles until just tender. Drain and set the noodles aside for later. In the same pot, add chicken broth and half of the sauce mixture. Bring to a gentle simmer and stir in spinach, cook until just wilted.
