The tricolour vegan shake is a patriotic celebration in a glass, featuring three distinct layers that mirror the Indian national flag. This plant-based beverage combines natural ingredients to create saffron, white, and green-coloured layers, representing the Indian flag. The best part is that it uses no artificial colours.
Soak the cashews for all three layers in hot water for at least 30 minutes or overnight. If you want it quicker, soak it in boiling water for 15 minutes, then drain completely. Soak the saffron strands in 1 tablespoon of warm water and set aside. Wash the spinach leaves thoroughly under running water and pat dry with paper towels. Pick and wash the mint leaves. Slice the frozen bananas if not already done. Measure out the plant-based milk, ensuring you have enough for all three layers.

Making the saffron layer
Drain all the soaked cashews. Add frozen mango chunks, drained cashews for one layer, oat milk, maple syrup, turmeric powder, and the soaked saffron with its water to a high-speed blender. Blend on high speed for 60-90 seconds until completely smooth. Scrape down the sides if needed and blend again. Check the consistency– it should be thicker than a regular smoothie. Pour this mixture into a separate container and place it in the freezer while you prepare the other layers.

Making the white layer
Quickly rinse out the blender jar. Add the frozen banana slices, coconut cream, oat milk, vanilla extract, maple syrup, and half of the remaining drained cashews to the blender. Blend on high speed for 60-90 seconds until silky smooth and white. Check that no cashew bits are remaining – blend longer if needed. The white layer should be slightly thicker than the saffron layer to prevent mixing. Transfer to another container and refrigerate while making the final layer.

Making the green layer
Rinse the blender jar again. Add the fresh spinach leaves, half frozen banana, fresh mint leaves, oat milk, maple syrup, and the remaining drained cashews to the blender. Start blending on low speed to break down the spinach, then increase to high speed. Blend for 90 seconds to 2 minutes until completely smooth. Taste and adjust the sweetness. The green layer should be the thickest of all three to sit properly on top.

Assembling the tricolour shake
Take out your serving glasses. Pour the saffron layer first into the glass, filling about one-third of the glass. Carefully pour the white layer next, tilting the glass slightly and pouring slowly down the side to avoid mixing. The white layer should sit on top of the saffron layer. Fill another third of the glass. Finally, pour the green layer on top using the same tilting technique. Pour very slowly to maintain distinct layers. Garnish the top with crushed pistachios and toasted sesame seeds.
