If you go to bed thinking about a good breakfast, then you have to try this uttapam recipe! Uttapams are savory pancakes made from a fermented batter of rice and lentils. They’re vegan, gluten-free, and light on the gut. And if you want to skip the overnight fermentation process, try instant dosa batter that will bring down the prep time to just 15 minutes. You can top uttapams with onions, tomatoes, or even other vegetables.
In a bowl, add the urad dal and methi seeds and rinse under water. Then soak the dal and seeds for 4-5 hours. In another bowl, take the rice and rinse it under water, before soaking it for 4-5 hours as well.

Prepare the batter
Drain the water from the dal. Keep aside the water and the dal in a grinder. Now, gradually add the water kept aside and grind the dal till the batter becomes frothy and smooth. Transfer this batter to a bowl. Now, drain the water from the rice and add the rice to the blender. Then, add ½ cup of water and blend until smooth. Add the rice batter to the bowl with the urad batter and mix. The final batter should be slightly thick, and not runny, with a pourable consistency.

Ferment the batter
Add a little salt to the mix if the temperature is not too cold or too hot. If the weather is extreme, add salt after fermentation. Cover the batter and let it ferment for 8-9 hours, or till it doubles in size. The fermented batter will have a sour aroma and air pockets. The fermentation time can differ based on the city's temperature.

Cook the uttapam
Heat a tawa and lightly brush oil on it. Once the tawa is hot, turn down the heat to low and pour a ladle of batter on it. If the batter is too thick after fermentation, add a little water. The uttapam is thicker than dosas, so pour the batter accordingly. If using veggies, add them on top of the uttapam. Drizzle some oil on top and sides, and let the uttapam cook till the base is golden brown. Flip and cook both sides. Each uttapam should cook for 3-5 minutes.

Garnish and serve
Once the uttapam is cooked, serve it hot with coconut chutney, sambar, or even a mint-coconut chutney.
