2 large Apples (peeled, cored & sliced thinly)
¼ cup (50 g)Brown sugar
2 tbspUnsalted butter (melted)
For cake batter
1 large Egg
¾ cup (150 g)Sugar
1 tspVanilla extract
⅓ cup (75 ml)Sunflower oil
½ cup (120 ml)Milk
1 tspBaking powder
½ tspBaking soda
⅛ tspSalt
1 tspGround cinnamon
1 cup (120 g)Wheat flour

Description - Step 1

Prepare the oven

  • Preheat your oven to 180°C (360°F).

  • Make sure it reaches full temperature by the time the batter is ready.

Arrange the caramel apple layer

  • Pour the melted butter into an 18 cm square cake pan.

  • Sprinkle the brown sugar evenly over it. 

  • Neatly layer the thin apple slices on top, creating an even caramel base.

Blend the wet ingredients

  • In a blender, combine the egg, sugar, vanilla, sunflower oil, milk, baking powder, baking soda, salt, and cinnamon. 

  • Blend for 20 to 30 seconds until smooth and well combined.

Make the batter

  • Place the wheat flour in a bowl. 

  • Pour in the blended mixture and gently fold just until the batter is smooth.

  • Avoid overmixing as it can ruin the tenderness of your crumb.

Bake the cake

  • Pour the batter evenly over the apple layer. 

  • Place the pan into the oven and bake for 30 minutes, or until the top is golden and a toothpick inserted into the centre comes out clean.

Cool and invert

  • Let the cake rest in the pan for 10 minutes, and then carefully invert it onto a serving plate.

  • Allow it to cool slightly so the caramel settles before slicing and serving.
