This avocado onigiri sushi recipe reimagines two classic Japanese dishes - onigiri and sushi – to create a flavorful appetiser. Onigiri is a traditional Japanese rice ball, formed in different shapes (triangular or cylindrical being the most common) and wrapped in nori. They can have sour and salty fillings, but unlike sushi, use plain, steamed and lightly salted rice. However, with this avocado onigiri recipe, the plain rice gets swapped with vinegared rice (commonly found in sushi). And diced avocado becomes part of the filling.

Add rice vinegar, sugar, and 1½ tsp of salt into a bowl. Gently mix them to season the vinegar. While the rice is still warm, gently fold in the seasoned rice vinegar using a slicing motion. Always use warm, freshly cooked rice. Let the seasoned rice cool to room temperature.

Add soy sauce, sesame seeds, and diced avocado to a bowl. Now, gently mix it all, ensuring the avocado is well coated. Don’t mash the filling. Keep it chunky.

Shape and wrap the onigiri
Lightly dampen your hands; it will make it easier to roll the rice. Take a small handful of sushi rice and flatten it. Add 1–2 tsp avocado filling in the centre and gently shape into triangles or rounds. Don’t compress tightly. Wrap with nori just before serving to keep it crisp.
