This fusion recipe of cheese-soya chowmein pizza paratha should be on your weekend indulgence menu, as it contains the goodness of the protein-rich soya, the nostalgia of street-style chowmein, and the classic flavours of pizza sauce and cheese. This recipe is one of the winners of the Aashirvaad Paratha Contest, from week 8, submitted by Uma Pandit. The challenge focused on fusion recipes that enhanced the flavour but retained the same old paratha goodness. The cheese soya chowmein pizza paratha is made with Aashirvaad High Fibre Atta with Multigrains, which contains a nutritious blend of six grains and is high in dietary fibre to support healthy digestion.

½ cupChopped veggies (carrots, bell pepper, beans and cabbage)
Take a bowl for the dough. Add the Aashirvaad 100% MP Sharbati Atta to the bowl, along with a pinch of salt. Add water as needed, then knead into a dough. Add 1 teaspoon of oil to the dough, then continue kneading.

Resting the dough
Cover the dough bowl with a plate and let it rest for 20 minutes.

Preparing the stuffing
Heat 2 tablespoons of oil in a pan. Add the chopped garlic and onion and sauté for 2 minutes. Add the boiled soya and all the chopped veggies, and sauté for 5 more minutes. Then, add salt and black pepper and mix them well. Now add the tomato sauce, chilli oil, vinegar, and lemon juice, and mix well.

Making the parathas
Dust your hands with the Aashirvad atta, take a ball of dough, and flatten it with a rolling pin. Spread pizza sauce over it and then arrange the prepared noodles. Cover it with another roti. Press it to adhere.

Frying the parathas
Heat oil in a pan and shallow-fry the paratha until it is cooked through and turns golden brown. Repeat with the rest of the parathas. Transfer the parathas to a wooden board, cut them into even pieces, and serve hot with grated cheese on top.
