Chenna Poda Recipe: A Soft And Spongy Indian Cheesecake

Try this chenna poda recipe to make the traditional, caramelised dessert from Orissa in your kitchen. Chenna poda is like an Indian cheesecake made from mixing cottage cheese with semolina, milk, ghee, and sugar. Cardamom powder is added for the aroma, while nuts like cashews and raisins are used as garnish. It’s easy to make this decadent dessert, especially with this chenna poda recipe. Start by crumbling the paneer into a bowl and mixing it with the other ingredients. Then you can bake it to achieve that soft, spongy interior and signature, caramelised (and browned) crust. Chenna poda literally translates to burnt cheese in Odia, and the state even celebrates a Chenna Poda day on April 11. The day is celebrated to honour the inventor of chenna poda, Sudarshan Sahu. Sahu, a sweet maker, accidentally created the dessert in 1947 when he left sweetened chhena in a warm oven overnight. Today, chenna poda is considered Odisha’s most iconic dessert, and the state has even demanded a GI (Geographical Identification) tag for it. Now that you know how to make chenna poda and are well-versed with its history, give this dessert a try!

No-Cook Angoori Rasmalai: Chilled Festive Dessert Recipe

No-Cook Angoori Rasmalai fits perfectly into moments when you want a festive dessert without spending time near the stove. Built around soft rasgullas and a flavoured milk base, this version keeps the essence intact while skipping the traditional slow reduction. No-Cook Angoori Rasmalai works well during warm weather when chilled sweets feel more inviting than heavy desserts. The idea of transforming rasgullas into a milk-based sweet has roots in Bengali kitchens, where milk desserts hold a strong place in celebrations. This no-cook dessert keeps that spirit alive but adapts it for modern kitchens. The use of condensed milk and milk powder helps recreate the richness usually achieved through simmering. Angoori Rasmalai becomes a reliable option when you need something quick yet satisfying, especially for small gatherings or last-minute plans.

Gond Katira Sharbat: Cooling Summer Drink For Instant Relief

Gond Katira Sharbat has long been a go-to summer cooler in many Indian homes, especially in regions where heat feels relentless. Made using edible gum that swells into a soft, jelly-like form, this drink carries a soothing texture and mild taste that blends beautifully with rose syrup and chilled milk or water. What makes this gond katira drink stand out is how naturally it supports the body during peak summer days. It helps keep body heat in check, calms the skin, and is often enjoyed by those looking for relief from acne flare-ups caused by heat. Along with that, it works as a simple way to stay hydrated without relying on packaged drinks. This sharbat fits easily into daily routines, whether served post-lunch or during late afternoons when energy dips. The addition of sabja seeds and dry fruits not only improves texture but also adds a bit of nourishment, making it more than just a refreshing glass.
