Scramble the eggs

Crack the eggs into a bowl. Add a pinch of salt and pepper and whisk until well combined. Heat 1/2 tbsp oil in a wok over medium heat. Pour in the beaten eggs and cook, stirring constantly, until set but still soft. Transfer to a plate and set aside.

Add the chopped onions, carrots, capsicum and cabbage to the wok. Stir-fry on high heat for 2-3 minutes until the vegetables are tender-crisp. Season with salt and pepper.

Add the cooked rice to the wok and mix well, breaking up any clumps. Drizzle the soy sauce evenly over the rice and toss to combine. Stir-fry for 2-3 minutes until the rice is heated through and slightly crispy in spots.
