Tandoori Cauliflower Bites are a healthy treat you can enjoy without the guilt. These crispy cauliflower florets are made with a flavourful yoghurt-spice marinade and are either baked or air-fried. Impressive, low in calories, and brimming with real Indian spice, they make the perfect appetiser or side dish.
Prepare cauliflower by washing and chopping it into small florets. Blanch for two minutes in boiling water, then remove from water and dry completely to prevent sticking.

Make the Marinade
To make the yoghurt mix, add the ginger-garlic paste, lemon juice, gram flour, 1 tbsp mustard oil and all the spices, except cardamom powder. Mix well. Stir until combined and fragrant.

Marinate florets
Transfer the cauliflower florets in the yoghurt marinade and coat well. Cover and chill for 30 minutes to let the flavours fully develop.

Air Fry the Florets
Start by pre heating your air fryer to 180°C (356°F). Evenly distribute the marinated florets on a baking sheet and roast for fifteen to twenty minutes, turning once halfway through. The florets should be crispy and golden.

After the Tandoori Cauliflower Bites are cooked, place them on a serving tray and top with chaat masala and lemon wedges.
