A delightful Indian pumpkin curry, kaddu ki sabzi, is simple to make, but bursts with flavour. It strikes a lovely balance between sweet and tangy, with just a hint of spice. Just a handful of everyday spices turn the simple pumpkin into a comforting dish that goes wonderfully with hot puris, parathas, or rice. Whether it’s a festive gathering or a quick weeknight dinner, this dish is an easy pick.

Ingredients

500 g Kaddu (pumpkin), (peeled & cubed)
3 tbsp Mustard oil, (or any cooking oil)
A pinchHing (asafoetida)
1 tspJeera (cumin seeds)
2 (slit)Green chillies
1 tspGinger (grated)
½ tspHaldi (turmeric powder)
1 tspRed chilli powder
2 tspDhaniya (coriander powder)
½ tspGaram masala
1 tspAmchur (dry mango powder)
1 tspJaggery (or sugar), (optional, for sweetness)
as per tasteSalt
2 tbspFresh coriander leaves

Description - Step 1

Step 1: Heat oil

  • Start by heating mustard oil in a kadhai until it just begins to smoke, then reduce the flame.

Step 2: Temper

  • Next, toss in a pinch of hing and some jeera, letting them sizzle for a moment before adding in chopped green chillies and ginger.

Description - Step 3

Step 3: Add the spices

  • Now, sprinkle in haldi, red chilli powder, and coriander powder. 

  • Give it a quick stir to prevent them from burning.

Step 4: Add the pumpkin

Add the cubed kaddu and mix it well with the spices.

Step 5: Cook them covered

  • Pour in some salt and about a quarter cup of water, then cover the pot and let the kaddu simmer on low heat for around ten minutes until it’s nice and soft.

Step 6: Mash and balance the flavours

  • Once the pumpkins are cooked, lightly mash some of the pieces to create a creamy texture. 

  • Stir in amchur, sugar or jaggery, and garam masala to balance the flavours.

  • Finally, finish it off with a sprinkle of fresh coriander for that perfect touch.
