The combination of spicy, tangy, and crunchy elements makes it irresistible. Easy to prepare at home, it doubles up as both a light snack and a hearty meal.

Description - Step 1

Step 1: Cook the Ragda

Soak white peas overnight. Pressure cook with turmeric, salt, and water for 3-4 whistles. Once done, open after steam releases naturally. The peas should be soft and mushy, forming a thick base for the topping.

Step 2: Prepare the Bread Mix

Soak bread slices in water for 30 seconds. Squeeze out excess water and place it in a bowl. This helps bind the potato mixture and gives the patties a nice texture.

Step 3: Make the Pattice Mixture

Mix mashed potatoes, soaked bread, turmeric, and salt until smooth. Divide into equal portions and shape into round patties. Keep them ready for shallow frying.

Step 4: Shallow Fry Pattice

Heat oil in a non-stick pan. Fry the patties on both sides until golden brown and crisp. Drain on absorbent paper. These will form the crunchy base of the snack.

Step 5: Assemble the Ragda Pattice

Place patties on serving plates and lightly mash them. Pour hot ragda on top, drizzle green and tamarind chutneys, sprinkle onions, crushed puris, chilli powder, and chaat masala. Finish with sev and coriander.
