Description - Step 1

Step 1: Grind the nuts

Place cashews and almonds in a blender jar. Coarsely grind them so they retain some texture. Transfer to a bowl and keep aside for later use. This mix adds crunch and richness to the ladoos.

Step 2: Roast the besan

Heat the ghee in a non-stick pan and add gram flour. Roast on low-medium heat, stirring continuously. The besan should slowly turn golden and fragrant. This step is crucial, as under-roasted besan will taste raw.

Step 3: Flavour and enrich

Sprinkle cardamom powder into the roasted besan and add the coarsely ground nuts. Mix well so the aroma of cardamom blends with the roasted flour. Remove the mixture from the heat and allow it to cool slightly.

Step 4: Sweeten the mix

Once cooled for about 15 minutes, add powdered sugar to the mixture. Use your hands to combine thoroughly, ensuring no lumps remain. The mixture should be moist and easy to bind.

Step 5: Shape into ladoos

Grease your palms lightly with ghee and shape the mixture into walnut-sized ladoos. Arrange neatly on a plate. Allow them to cool fully before transferring to an airtight container for storage.
