This non-fried Suji Kachori is a healthy twist on the classic snack, made with a soft semolina dough and filled with a rich, creamy stuffing of paneer, hung curd, spices, and dry fruits. Cooked in an appe pan instead of deep-frying, these kachoris turn perfectly crispy on the outside and soft on the inside, making them a guilt-free and delicious tea-time treat.

For the Outer Dough:
2 cupsWater
1 cupSemolina (Suji/Rava) (Fine variety works best)
1 tbspOil/Ghee (for kneading/greasing)
1 tspChilli Flakes
1 tspSesame Seeds (Til)
2 tbspFresh Coriander, finely chopped
to tasteSalt
For the Stuffing:
½ cupHung Curd (Thick Yoghurt) (Must be thick, no water)
½ cupPaneer (Cottage Cheese), grated
1 smallOnion, finely chopped
1-2Green Chillies, chopped
1 tspGinger, grated
1 tbsp Dry Fruits chopped Cashews & Golden Raisins (Kishmish)
HandfulFresh Coriander, chopped
Spices:
½ tspRoasted Cumin Powder (Jeera)
½ tspBlack Salt (Kala Namak)
to tasteRegular Salt
½ tspSugar (to balance the acidity of the curd)
¼ tspBlack Pepper Powder
1 tspOil (mixed into the stuffing)

Description - Step 1

Creating the Dough

Place a wok or pan on medium heat. Add the water. As the water heats up, add chilli flakes, sesame seeds, chopped coriander, salt, and 1 tbsp of oil. Let this come to a simmer. Lower the heat and slowly pour in the Semolina (Suji) while stirring continuously to avoid lumps. Keep stirring until the mixture absorbs all the water and comes together as a soft, singular lump (dough-like consistency). This takes about 2-3 minutes. Remove the dough from the pan and place it on a flat surface/plate. Let it cool slightly (warm to the touch, not hot). Grease your hands with oil, then knead for 1-2 minutes until smooth and pliable.
