Description - Step 1

Step 1: Heat Khoya

Add grated khoya to a non-stick pan. Turn the flame to medium-low and stir gently. The goal here is to warm it enough so it starts releasing fat but doesn’t brown.

Description - Step 2

Step 2: Add Sugar

Once the khoya softens, add sugar and stir. The mixture will loosen slightly as the sugar melts, then begin to thicken as you keep stirring. Cook until the mix leaves the sides of the pan and forms a lump.

Step 3: Mix Cocoa And Colour

Sift cocoa powder directly into the pan to prevent lumps. Add 2–3 drops of liquid chocolate food colouring to deepen the colour. Mix until you get a uniform, glossy chocolate mass.

Step 4: Cool The Mixture

Turn off the heat and transfer the mixture onto a greased plate or parchment paper. Let it cool slightly—it should be warm enough to handle, but not hot.

Step 5: Shape Pedas

Divide the cooled mix into 12 equal portions. Roll each portion between your palms and flatten slightly to form pedas. Press a sliver of almond in the centre for garnish.

Step 6: Serve Or Store

Arrange on a clean plate or box. These pedas can be offered as prasad or stored in an airtight container for up to 3 days at room temperature.
