Khapli Wheat–Flaxseed Crackers Recipe: The Perfect Balance Of Crunch And Goodness

One of India’s oldest grains, khapli wheat (or emmer wheat) has been grown for generations for its distinctive nutty flavour and digestive benefits. For those looking for mindful eating alternatives, try the khapli wheat-flaxseed cracker recipe. These crackers combine khapli wheat with flaxseeds, which are rich in omega-3 fatty acids and fibre. They go well with cheese, hummus, and even Indian chutneys, thanks to their crispness and earthiness. Crackers originated as crispbreads in Europe; however, they have been adopted by Indian households and made with local grains. Just make sure to use authentic khapli wheat like Aashirvaad Chakki Khapli Atta, which has a higher protein content (30% higher) and more fibre, aiding digestion.

Directions

Description - Step 1

Prepare the Dough

Mix the atta with the salt in a big bowl. To make a soft, smooth dough, drizzle with some oil or ghee and slowly add water while kneading. Cover the dough and leave for 8-10 minutes.

Description - Step 2

Roll Mini Parathas

Make little balls out of the dough. Sprinkle each ball with atta and roll into a thin disc that is about 3 to 4 inches in diameter.

Description - Step 3

Cook Parathas

Preheat a non-stick tawa or pan. Brush liberally with oil or ghee to make them more pliable, then cook each small paratha until golden spots form on both sides.

Description - Step 4

Shape the Taco Shells

While the parathas are still warm, form them into taco shells by draping them over a bowl rim or rolling pin. Let them cool down a little so they can retain their shape.

Description - Step 5

Fill and Serve

Pile on the spiced beans, paneer, fresh vegetables, and toppings of your choosing (chutney, yoghurt sauce, etc.) into each shell. Serve right away for the best texture.
