For many households, Eid can feel incomplete without biryani. Traditionally, a slow-cooked dish, today biryani has multiple versions– and not all of them require long hours in the kitchen. Quick-fix mutton biryani, a lamb and rice dish, is usually made in a pressure cooker, instead of the traditional handi (thick-bottomed pan). It takes a lot less time but still retains the flavor that makes biryani a crowd favourite.

2 cupsRice
2-3 cupsWater
¾ cupsOnions (thinly sliced)
3-4Green chillies
1 tspGaram masala
¼ cupMint leaves
¼ cupCoriander leaves
1Bay leaves
1 pieceMace
¾ tspCumin
6Green cardamoms
1Black cardamom
1Star anise
4Pepper corn (crushed) (optional)
1Cinnamon
4-6Cloves

Description - Step 1

Prep the rice

Wash and soak the rice for at least 20 minutes. Drain it in a colander and set it aside.

Description - Step 2

Marinate the mutton

Wash the mutton and completely drain the water. Marinate it with curd and marination spices. Set it aside for a minimum of 20 minutes if you are short on time. If marinating on the same day, and you have extra time, marinate it longer (up to an hour). Ideally, mutton should be marinated overnight.

Cook the spices

In a pressure cooker, add ghee and all the dry spices. Sautè them together till they sizzle, before adding onions and green chillies. Cook till the onions turn brown. Then add half of the mint and coriander and sautè for a minute.

Cook the mutton

Add the marinated mutton pieces to the pressure cooker and mix them well with the spices. Add ½ to 1 cup of water and let it pressure cook, on a low flame, till the mutton pieces turn soft and tender. It can take between three to four whistles (approximately 12-15 minutes).

Cook the biryani

After the mutton is cooked, add the soaked rice with 2-3 cups of water, salt, mint, and coriander. Mix gently. Now, let it all pressure cook on medium heat till you hear 1 whistle. After 1 whistle, turn the heat to low and let it simmer for approximately 8 to 10 minutes. Switch off the heat and let it rest.

Fluff, garnish, and serve

Open the lid of the pressure cooker and gently fluff the rice. Garnish with fried onions and serve hot, with raita.

Plating Instructions

Serve it in a dark colored bowl or a small, brass handi for a traditional look. Place a piece of the mutton on top for added visual appeal.
