Description - Step 1

Prepare the tempering

Heat 1 tablespoon of oil in a pan. Add mustard seeds and let them splutter. Toss in peanuts and roast them till crunchy and golden. Add curry leaves and green chillies, and stir until the chillies lose moisture. This base adds aroma and taste to the premix.

Mix dry spices

Lower the heat and add turmeric powder and red chilli powder. Stir well so that the spices coat the peanuts and curry leaves evenly. The gentle roasting ensures the spices release flavour without burning.

Add the poha

Add poha and sprinkle salt. Roast for a few minutes until the poha becomes slightly crisp. Stir gently so flakes don’t break. This step ensures the poha stays light and fluffy even after being stored. Switch off the stove and allow the mixture to cool.

Store the premix

Once cooled, transfer the poha premix into a clean, airtight container or vacuum-sealed pouch. Store it in a dry place. This way, the mix will remain fresh and crisp for weeks. Always ensure the poha is completely cool before sealing.

Make poha from premix

Take the required premix in a bowl and pour hot water just above its level. Cover and rest for 10-12 minutes. Fluff with a fork once the water is absorbed. Add lemon juice if available for freshness. Your instant poha is ready to enjoy in minutes.
