A plant-powered twist on India’s favourite tandoori style cooking, these tofu skewers deliver all the smoky, spiced goodness of a juicy grilled dish, without the meat. Cubes of tofu are bathed in a yoghurt marinade with choicest spices and then grilled. They pair well with flatbreads or are even great when served with mint chutney.

1 largeRed chilli pepper (stemmed, deseeded for less heat)
In a bowl, mix vegan yoghurt, chilli, garlic, spices, tomato paste, and oil until smooth and fragrant.

Marinate the tofu
Cut tofu into cubes, place them in a bowl, and coat with the marinade. Cover and refrigerate for at least 4 hours (or overnight for a deeper flavour).

Prepare the grill
Preheat the grill or BBQ to medium heat. Lightly oil the grates to prevent sticking.

Skewer and grill
Thread marinated tofu onto metal or bamboo skewers and grill with the lid closed for 10 minutes on one side, then flip and cook for another 8-10 minutes. Baste occasionally with leftover marinade for a deeper char and colour.
