To make this healthy one-pot dish, you'll need rice, split moong dal, potatoes, seasonal veggies, and fragrant spices. Ghee, mustard seeds and curry leaves give the khichdi a powerful tempering that is hard to resist. Use running water to rinse the rice and split yellow moong dal thoroughly. Let it soak in water for ten minutes, and meanwhile chop the veggies.

Prepare Tempering
Take a saucepan or pressure cooker and heat 2 tbsp of ghee. Add curry leaves, dried red chilli, mustard seeds, cumin, and hing. Sauté the seeds until they begin to splutter.

Sauté Aromatics and Veggies
Sauté the chopped onions until they become transparent. Toss in the green chillies and ginger paste, mixed veggies and potatoes. Cook for 2 minutes and add tomatoes. Simmer until the veggies are tender. Add masalas like turmeric, chilli, coriander, and cumin powder. Mix well.

Combine Rice, Dal and Water
Drain the soaked rice and dal and add them to the cooker. Pour in three cups of water and some salt and stir.

Cook Khichdi
Pressure-cook for three whistles, or until the rice and dal are soft and the khichdi has a porridge-like consistency. Serve right away after garnishing with some fresh coriander.
