Cook the Almond Paste
In a pan, heat ghee over medium heat. Once hot, add the almond paste (made by soaking almonds overnight and grinding them). Sauté for a couple of minutes until it emanates a delightful nutty fragrance.
Add the ingredients
Now, incorporate sugar, saffron, and cardamom powder into the almond mixture. Mix thoroughly to ensure all ingredients are well combined. Keep cooking the mixture over low heat, stirring constantly to avoid any sticking to the pan.
Add Saffron
Once the mixture begins to come together and pulls away from the sides of the pan, remove it from the heat. Dilute some saffron in warm milk and incorporate it into the mixture for a vibrant yellow hue. Shape the mixture into a dough by adding icing sugar.
Shape Ashrafi and Serve
Take small portions of the mixture and roll them into round balls. Then, place each ball between two coins and press gently to flatten them into discs. Finally, use a knife to trim off any excess mixture around the edges.
