Description - Step 1

Step 1: Prep the rice

Rinse the basmati rice and soak it for 20 minutes. Drain the soaked rice and set it aside.

Step 2: Cook the rice

Boil milk in a heavy-bottom pot. Once boiling, reduce to a simmer. Add the drained rice to the simmering milk. Stir occasionally to prevent sticking.

Step 3: Sweetening and Flavouring

In a separate pan, dissolve the grated jaggery in 1 cup of water over low heat. Strain to remove impurities. Add the jaggery syrup to the simmering rice and milk mixture slowly, stirring well. Add crushed cardamom pods and saffron strands (if using) to infuse aroma.

Step 4: Roasting nuts and garnish

Heat ghee in a small pan, and fry cashew nuts and raisins until golden. Stir the roasted nuts and raisins into the payasam. Simmer for 5 more minutes until thickened

Pour the payasam into small dessert cups. Garnish with some extra roasted nuts for that crunchy texture.
