500 gBoneless chicken thighs (cut into bite-sized cubes)
Combine yoghurt, cornflour, rice flour, ginger-garlic paste, red chilli powder, black pepper, garam masala, lemon juice, and salt in a bowl. Add chicken cubes and mix until every piece is coated evenly. Rest for at least an hour in the fridge to lock in flavour and tenderness.

Heat oil in a deep frying pan to 170°C. Fry chicken in batches for 6–8 minutes until golden and crisp. In a separate small pan, heat a spoon of oil, toss in curry leaves and dried red chillies, and sauté for 20 seconds. Add the fried chicken and toss to coat it in this aromatic tempering.
