Though it didn’t originate in India, samosa can be found on every street corner here, especially up North. The popular street snack has almost as many versions as there are cuisines in the world. One such version is the Thai curry samosa, where the filling includes red (or green) Thai curry paste mixed with the vegetables (or minced meat) to impart that distinctive taste of Thai cuisine.

Description - Step 1

Make the filling

In a large bowl, mash the boiled potatoes. Now, add green peas, red curry paste, soy sauce, onions, and lime juice. Taste test and then add salt since soy sauce is salty as well. Mix it well.
