Description - Step 1

Step 1: Build the Chicken Masala

Warm ghee and coconut oil in a deep pot, letting the whole spices release a soft aroma. Add the onions and cook until they lose their crunch but stay pale. Stir in ginger, garlic, and chillies, letting them settle into the fat. Add tomatoes and spices, then fold in the chicken and curd. Let it simmer until tender and coated in a glossy masala.
