Make the batter
In a large bowl, whisk together the rice flour, cornstarch, onion powder, garlic powder, paprika, cayenne pepper, and salt. Now, add the milk and only 2 tbsp of the hot sauce. Whisk again, until it forms a smooth, lump-free but thick batter. It should be like a thick pancake batter, not dough-like. If the batter feels too stiff, add a tablespoon of water and mix.
