Spicy Changezi Chicken: Flavorful Tomato Gravy.

Chicken (thigh & drumstick)
900 gms
Ginger Garlic paste
3 tbsp
Salt
to taste
Curd, beaten
4 tbsp
Turmeric powder
1 tsp
Degi Red chili powder
1 tsp
Coriander powder
1 tsp
Garam masala powder
1 tsp
Onion, sliced

Cashews nuts

Bay leaves

Directions

Marinate the Chicken

In a mixing bowl, combine chicken, ginger garlic paste, salt, curd, turmeric powder, garam masala, degi red chili powder, coriander powder, and lemon juice. Mix thoroughly until well combined.

Prepare the Gravy

In a pan, heat oil and add onions to shallow fry. Then add cashews and fry them. In a bowl add garam masala, degi red chili powder, turmeric powder, coriander powder and salt to taste and mix. Transfer it into a grinder jar and make a coarse paste.

Cook the Chicken and puree

In a separate pan, fry the marinated chicken until it is tender and cooked through. Once the chicken is cooked, using the same pan, add whole red chillies, bay leaves, and cloves. Allow them to splutter, releasing their flavors. Then, introduce fresh tomato puree and let it simmer for 4-5 minutes, enhancing the sauce with vibrant color and richness.

Combine the ingredients and cook

Once the tomato puree is cooked down, incorporate the prepared onion masala and sauté until well combined. Then, add the curd and cooked chicken, ensuring they are thoroughly mixed into the sauce. Pour in water and allow the mixture to simmer for 5-6 minutes over medium flame, allowing the flavors to meld together.
