All-purpose flour - 1 cup + 1 tablespoon (150 g)
Cornstarch
1 tbsp (10 g)
Baking powder
1/8 tsp
Salt
1 tsp
Milk - 1/2 cup + 1 tablespoon (130 ml)
Vinegar
1 1/2 tsp
Unsalted butter
3/4 cup (173g)
Brown sugar
3/4 cup (150g)
White granulated sugar
3/4 cup (150g)
Unsweetened cocoa powder - 1/2 cup + 1 tablespoon (57 g)
Instant coffee powder
1 tsp
Chocolate chips or chunks
1/2 cup (100 g)
Walnuts or pecans: chopped (optional)

Directions

Prepare the Mixture

Let's start by mixing together the flour, cornstarch, baking powder, and salt in a bowl. Set that aside for now.

Mix the Batter

First, melt the butter and add the sugar. Stir until they're well combined, or you can pop it in the microwave for about a minute. Then, add the cocoa powder and coffee, and mix everything together well while stirring constantly for about 2 minutes. After that, add in the chocolate chunks, and give it another minute in the microwave. Finally, whisk it all vigorously for about 1 to 2 minutes.

Combine the wet & dry ingredients

Now, mix the milk mixture using a whisk, then pop it in the microwave for 2 minutes. Be careful when you remove it, then whisk it again for another 1 to 2 minutes. To make sure all the sugar is dissolved, give it a little rub between your fingers. Once that's done, combine the wet mixture with the dry ingredients, and whisk everything thoroughly for a lump-free result, which should take around 30 seconds.

Prep the baking pan

Preheat your oven to 350°F (180°C) and line a baking Let's prep our baking pan by lining an 8x8-inch pan with parchment paper. Now, pour the batter into the mold, making sure to spread it to the edges with a spatula and smoothing out the top. Give it a gentle tap on the counter to remove any air pockets. If you like, you can also sprinkle some walnuts on top for an extra crunch and flavor boost.

Bake, Cute & Serve

Now, let's preheat the oven to 325º F (165º C). Pop those brownies in and bake them for about 25 minutes, or until they're set and the tops are beautifully cracked. Once they're done, allow them to cool completely. Then, carefully run a thin knife around the edges to loosen them up. Lift them out using the parchment paper sling. Finally, cut those delicious brownies into 9 squares and enjoy every chocolaty bite!
