Millet Veggie Burgers is a complete and wholesome meal, made with millets and vibrant vegetables.

Soaked and cooked barley millet
1 cup
Grated carrot
1
Grated yellow zucchini
1
Chopped onion, medium
2
Chopped garlic
4-5 cloves
Chopped coriander
4 tbsp
Chopped green chillies

Mixed herbs
2 tsp
Salt
2 tsp
Red chili powder
1 tsp
Millet flour or as required for binding
1 cup
Oil to shallow fry
Burger buns

Butter
3 tbsp
Mayonnaise
3 tbsp
Lettuce leaves

Cheese slices
8
Onion rings

Directions

Prepare the Patty Mixture

In a bowl, combine the cooked barley, grated carrot, zucchini, onion, garlic, coriander, green chili, mixed herbs, salt, and red chili powder. Mix thoroughly to ensure all the ingredients are well combined. Next, add millet flour to the barley veggie mixture to help the patties bind perfectly. Use your hands to mix the flour with the veggies and barley until the mixture comes together into a dough-like consistency.

Shape the Patty

Take some mixture between your palms and roll it in the shape of a ball. Flatten the ball to form a round patty. Take an equal amount of mixture and form patties using the entire mixture.

Fry the Patty

Heat oil in a pan. Once the oil is hot, place the patties and shallow fry on low-medium heat. Flip the patty on each side, and fry till it turns golden brown. Transfer to a plate and keep aside until further use.

Assemble the Burger

Cut burger buns in half and toast them in the same pan used for frying the patties until golden and crispy. Spread butter on the top half and mayonnaise on the bottom half. Layer a lettuce leaf, patty, cheese slice, and onion slice on the bottom half. Place the top half on the burger and press gently. Secure with a toothpick. Serve the Millet Veggie Burgers with your favorite sauce or dip.
