Kodo millet pongal, known locally as varagu pongal, is a quick and nutritious breakfast dish. It’s healthier than regular pongal because it uses kodo millet as a base. The addition of cashews enhances the benefits, texture, and flavour. And the best part? It comes together in a matter of minutes.

Description - Step 1

Step 1: Prep the ingredients

In a pan, dry roast (roast without ghee or oil) the moong dal on a low flame for a few minutes, till it turns golden brown. Dry roast the moong dal till golden brown. Thoroughly rinse the kodo millet under running water. Now, soak the roasted dal and rinsed millet in water for 20 minutes.

Step 2: Cook the pongal

Transfer the soaked millet and dal mixture to a pressure cooker, along with 2 ½ cups of water and salt to taste. Cook on a medium flame for 10 minutes, or till you hear 3 to 4 whistles. Switch off the heat and let the pressure release.  Once the pressure releases, mash the mixture with a ladle.

Step 3: Prepare the tempering

In a small pan, add a tsp of ghee and lightly fry the cashews. Once they turn golden brown, set them aside. Now, add a tsp of oil in the same pan. On medium heat, add cumin seeds. Once they begin to splutter, add all other ingredients. Stir for 30 seconds.

Step 4: Add the tempering and serve

Add the tempering and fried cashews on top of the pongal. Gently stir it. Serve hot with chutney and sambar.
